With over 1,000 sake breweries producing a wide variety of different sake each, there's a lot of sake out there. In our 'Geek Out' segments we take a deep dive discussing and tasting sake that stands out from the crowd, i.e., the really special stuff. This episode, we take a close look at Gozenshu 御前酒 9, a junmai sake brewed in Okayama Prefecture (Omachi country!) with local Omachi rice using a starter technique that dates back over half a millennium. It was complex with lively acidity, hints of dairy, and drank ever so balanced. Grounded with a nice earthiness and depth, but also slightly crisp. A lot of love for this versatile, and delicious sake.
