Golden Lemon Custard Pie Recipe
Custard:
500ml milk
2 eggs whisked
4tbs cornstarch
6tbs sugar
Heat above in a pan until thickened
Add 80g mascarpone and juice of 1 lemon
Mix well. set aside to cool
Pie Pastry:
1 egg
120g sugar
lemon zest
Mix above well
Add 320g flour
6g baking powder
140g cold butter cut into small cubes
knead together by hand or mixer until it forms a dough
Grease pie pan with butter then take 2/3 dough to line pie tray.
For remaining pie dough, roll flat and cut rings with a cookie cutter and decorate outer edges of your pie, per your liking.
Bake at 180 deg C (350F) for 35 minutes and let cool.
