Beef/Mutton Tikka Boti
Ingredients
FOR SPICE MIX:
Cumin seeds 3/4 tsp
Coriander seeds 3 tsp
Bay leaves 3
Cinnamon sticks 2
Cashew nuts/kaaju 8-10
Dried red chili 1 or more
Nutmeg/jailfal 1/2
Mace/ Javitri 1
Green cardamoms 3-4
OTHER:
Beef or Mutton 1 kg (I used boneless, you ca use with bones)
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Yogurt 3/4 cup
Salt to taste
Red chili powder to taste
Turmeric powder 1/2 tsp
Garam masala 2 tsp
Cumin powder 2 tsp
Paprika powder 2 tsp
Oil 1/2 cup
Preparation
1. Add all the ingredients under "Spice mix" to a pan and dry roast them on a low flame until aromatic.
2. Allow to come to room temperature.
3. In a mixing bowl, add ginger paste, garlic paste, yogurt, salt, red chili pwder, turmeric powder, cumin powder, garam masala and paprika powder. Mix well.
4. Add the powdered spices to yougurt mixture and mix well.
5. Add this marination to the beef boti and mix well.
6. Allow to marinate overnight.
7. Next day put oil in pressure cooker and add the boti.
8. Pressure cook for 4-5 whistles or 12-15 minutes or until the meat is tender.
9. Let the pressure release and turn the flame on. Evaporate the liquid on high flame.
10. Lastly, turn the flame off and smoke with live charcoal.
11. Serve with naan, kachumar salad and mint raita. Enjoy!
