Wow, I was blown away when Sohla baked the puff pastry first! Great idea. I've made stuff with store bought pastry, and it all went into the oven raw. As a result the pastry was undercooked beneath the filling. Thanks for a great tip! All three variations look super delicious. If you can't get hazelnuts, can you use Nutella instead? Thanks, Sohla!

We made the almond croissant sheet pan for Christmas morning. It was SO easy and delicious. Of course, it’s not quite as good as a real double baked almond croissant but for the amount of effort, it is so worth it. Will be making it again when having people over

This is such a great way to play with puff pastry! I'm curious to test it with blitz puff pastry, since I rarely remember to have store-bought lying around but blitz is so fast I could see making a batch and then prepping the filling while the pastry chills! (Actually now I want to make a variation on Bakery Nouveau's cranberry-vanilla croissants this way, that would be amazing!)

When I am not making my own puff, I use DuFour brand instead. It has to be the best I have come across. It is quite pricey, but worth every penny! I have to try this recipe ❤

i made it for christmas morning too! literally could not have been easier, i baked off the pastry & made the frangipane on christmas eve and then just assembled & heated in the morning. it's the perfect special holiday breakfast that doesn't actually involve doing a ton of work first thing in the morning. this video is giving me all sorts of ideas for new flavors to try on future christmases :)

Sohla is the best. I have been following her since the history channel ancient recipes. I loved her with the 52 KZitem channel a show she had there which was really really really really really really good and now with the New York Times the show was absolutely perfect, so yeah everything she does is so interesting and watching her cook is just the best. I just pre-ordered her Cooke new cookbook coming out in October of this year And I can’t wait for the read. If I had any one suggestion for her is I’d like to see her do stuff with for those for those of us who have diabetes or other food requirements.

I'm French and this has nothing to do with a croissant 🥐 at all ! The dough is way different and a croissant 🥐 is called a croissant because of the geometric shape you give to the dough or think "croissant de lune 🌙" (Crescent moon) . And frangipane is use in many recipes including croissants which in them is delicious and if you make real croissant it's definitely worth trying 👍

Yes, you can bake the puff pastry at night for example, and then do the cream while you are waiting for the oven to preheat in the morning.

Don't know if anybody else mentioned this but this is almond cream, not frangipane. Frangipane is almond cream mixed with pastry cream.

It is puff pastry something so no croissant, because as you may can guess it is named after its shape, a half moon or cresent (see "croissant")
