Aside from its extraordinary shashliks, Gijduvan is also famous for its pea bread. More than 600 Kulcha breads are baked in this house every day. About 80 at a time. Each one weighs almost 1 kg. Very dense, but soft, delicious, slightly sweet. The preparation process takes more than 24 hours. First, they make a ferment with peas and barley, leave it for 12 hours. As soon as the ferment is ready, they mix it with a certain amount of flour and water, knead it and leave the dough to rise for another 4 hours, then knead it again in a machine. The most impressive part is when a person enters the hot tandoor and shapes them, and then removes them. And so 8 times a day 🙈. After all, what hard work, respect and respect for this family ❤️
