Ginger Chutney is a spicy, tangy and sweet combination chutney. Ginger Chutney or Inji chutney goes well with idly, dosai, pesarattu.
Garlic is optional in this recipe but my personal choice is with garlic as it gives a good taste to Ginger chutney
Ingredients
Sesame oil - 1 tblsp (You can also use ground nut oil or any regular oil)
Whole urad dal - 1.5 tsp
Ginger slices as shown in video - 15 nos
Garlic - 3 to 5 cloves with skin
Cumin seeds - 1/2 tsp
Tamarind - 1 no. gooseberry sized
Jaggery - 2 to 3 tblsp after powder - adjust
Dry red chili - 4 to 10 - adjust as per your needs
Water - 1/2 cup water for cooking
Salt - as needed
Water for cleaning - 2 tblsp
Temper
Sesame oil - 1 tblsp (or whatever oil you used before)
Mustard - 1/4 tsp
Curry leaves few
Dry red chili - 1
Garlic - 10 nos crushed and skin removed.
Measuring Details
1/2 cup - 125ml
1 tblsp - 15 ml
1 tsp - 5 ml
