Sliced pork: 300g
Cabbage: 1/4 head
Onion: 1/2
Marinade
Maitake mushrooms: 30g
Ginger (minced): 15g
Sake: 1 tbsp
Flour: 1 tbsp
Seasoning Sauce
Ginger (grated): 15g
Garlic (grated): 10g (1 clove)
Onion (minced): 50g
Sake: 2 tbsp
Mirin: 2 tbsp
Soy sauce: 2.5 tbsp
Sugar (beet sugar): 1 tbsp
Olive oil: slightly less than 1 tbsp
*Instructions*
1. Thinly slice the cabbage, soak it in water, and drain well.
2. Cut the onion into 1cm wide slices, shred the maitake mushrooms, and mince the ginger.
3. In a tray, mix the pork, maitake mushrooms, minced ginger, and sake. Sprinkle flour evenly to marinate the meat.
4. Blend the ginger, garlic, and onion for the seasoning sauce into a paste using a food processor.
5. Heat olive oil in a frying pan and sauté the onion over medium heat. Once cooked, set aside.
6. In the same pan, cook the pork. Add the seasoning sauce, return the sautéed onions to the pan, and simmer.
7. Once the pork is fully cooked and the sauce is well absorbed, remove from heat.
8. Plate the cabbage and serve the ginger pork on top.
