Christmas time is almost upon us with its festivities. Shops have started to stock on Christmas light and decorations and I have started to think of my Christmas baking already. This Gingerbread Layered Cake is a dessert I have been thinking of for a while now and it's now finally time to actually make it and share it with all of you. It's special to me because gingerbread is a tradition we keep year after year in our household. And if we only had gingerbread houses the years before, now we can also indulge on this gingerbread cake, packed with all the spices we love during this special time of the year: cinnamon, cardamom, star anise and orange.
It's far from being a complex cake, but it's delicious with its fluffy gingerbread sponge and dense, but melt-in-your-mouth orange cream cheese buttercream. The sponge is based on an egg foam, therefore it's incredibly fluffy and airy, complementing perfectly the smooth and tangy buttercream.
I decided to keep the decor simple as I usually do (less is more in pastry!) and went for a few gingerbread men and tiny trees, which made the cake very festive and playful.
