Happy Girls Day!
It is Japanese tradition to celebrate Hinamatsuri (Girls Day) on March 3rd every year. Hinamatsuri, or the doll festival, celebrates girls and pray for their continued health and happiness. Usually sweet treats like chichi dango (Sweet mochi dumplings) are made in celebration of Girls Day!
Join our family as we make chi chi dango and Ichigo (strawberry) mochi filled with an (sweet bean paste). These treats are delicious!
Chichi Dango Recipe:
1 box Mochiko (3 1/2 C.)
2 C. sugar
1 tsp baking powder
2 C. water
1 tsp vanilla
1 can coconut milk
red and green food coloring
potato starch
Mix ingredients and separate into 2 bowls. Add one drop of food coloring to each bowl. Pour one bowl of mixture into a 9x13 inch pan. Cover with foil and bake in the oven at 350 degrees for 30 min. Take out and add the second layer and bake for another 30 min. Cool. In our experience, I waited 12 hours to scrape out of the pan. Cut into rectangles, cover with potato starch and serve.
Ichigo daifuku Recipe:
1 box Mochiko (3 1/2 C)
1/2 C. sugar
1 1/2-2 cups of water
1 tray of strawberries (approximately 15 or so)
1 can or pkg of anko
Mix ingredients and steam for 30-40 min.
Wash, dry, and cut off stems off of the strawberries. Roll anko into small balls and flatten. Cover the strawberries with the anko and cover with plastic wrap till the steamed rice is ready.
Roll out rice balls. Make sure to cover the mochi with potato starch. Flatten mochi and cover the anko strawberry with mochi. Pinch ends.
