I’m not celiac, and don’t know any celiacs. But as someone who bakes a lot of bread, I thought I’d test this recipe out, and I’m very impressed. Although I’m not about to give up my wheat bread, this will be the recipe I keep up my sleeve should I ever make friends with a celiac. Thank you for sharing it.

Further to my last comment- I just made it in a pan that was bigger and made a foil “brick” at the end to make the pan smaller - bread didn’t rise very much but really delicious. You are an angel for doing this for us all xo

THANK YOU SO MUCH!!! Both my daughter and I are intolerant to Gluten...and the small loaves of gluten free bread are over $7.....while the large loaves are over $10. It's nuts! And the only good tasting options is Canyon Bakehouse. All other GF options are awful! Can't wait to make this!!

We don't know which flower she used. You can't use any flower with a rice or corn filler in it. I am still working on a recipe what is Truly gluten and GRAIN free, This is where the problem is! all grains have gluten.

@@DarthLordRaven I'm highly sensitive to gluten....(although eating eating right has helped lower the sensitivity over the past 9 + yrs.) ...but my daughter who is 3, was born severely allergic......even the tiniest amount. And we found that Bob's line of GF flour has never given me or my daughter a problem. Have you tried his?

@@DarthLordRaven Also...they make meters that you can buy that measure for gluten in anything before you eat it. I believe Amazon has some...but I'd check with the Celiac sites first, for the most comprehensive ones. Hope it helps. It's hard not to find things with Gluten or made on an assembly line with Gluten. When I first got sick from Black mold and exposure to Round-up....wich toppled my immune system....I was so bad I couldn't even walk near the bread isle...or near a bakery. Just the smell would set me off and my eyes would begin to water, I'd Start to sneeze....and if I didn't get fresh air...asap... my stomach would feel like had crushed glass in it...and I'd vomit then faint on the spot. People don't understand just how bad Gluten allergies are. And my poor kid suffered in the womb because my immune system attacked hers all through pregnancy. And I was told I couldn't even have kids....SUPRISE! I hope you find a good recipe....please let me know if you do. I haven't made this one yet....will try it out soon.😊 God bless. Christina

P.s. There are some grains that don't have gluten....but they are harder to work with. Potatoes and potatoe powder seem to be the base of most things when it comes to bread or baking. A few GF flours are made with beans....but I caution ....it makes them taste a little strange and is hard to work with. Very heavy and dense. Also...pasta bought in Italy...directly from Italy....will not have gluten...it's banned there. And there is also a black pasta made from squid....does not taste like squid....it's gluten free.

@@c.e.benson3263it's not the gluten that is banned. All wheat, rye, and barley, and their derivatives, contain gluten. What is banned in Italy is the glyphosate (marketed as Roundup), which is a pesticide. Unfortunately, in the USA, glyphosate is not banned and it is used heavily--even to harvest organically grown wheat, because it dries it out and makes it easier to harvest! So many "gluten-sensitive" people are actually sensitive to the glyphosate. I know people who do not tolerate gluten but can go to Italy and eat all of the wheat-based pasta and breads there, because they do not use glyphosate. I do not tolerate gluten, and I wasn't tested for celiac disease before I stopped eating it. So, I don't know if it is actually an issue with glyphosate, or a case of celiac disease. I would love to know.

Oh no, I don't know what I did wrong. It didn't rise at all. I used King Arthur gluten-free flour. I follow the directions exactly. I weighed everything on a scale. It never rose in the the oven. I baked it anyway and it tastes good but it's only two inches tall. What did I do wrong? I used active dry yeast?

For a cold proof, you will have to let it proof longer. Some people proof theirs in the fridge overnight. The benefit of cold proofing for gluten free dough is that it give the starches (especially rice flour) time to absorb the liquid and fully hydrate.

Hi Nancy, I noticed your bread Tim is quite small and finding it hard to find one that size here In Australia - guessing if you use a larger pan it won’t be as high? Also, most gluten free four mixes here already have Xanthan gum included - do I leave it out or just add a little?

I finally purchased a small bread tin off Temu and made it again and it rose and was perfect but just so small in size. Have you tried doubling the recipe for a larger loaf? Would love the same bread but larger. I know there are some recipes you can’t just double for the same results.

If I'm using GF flour that already has xanthan gum in it, do I need to add extra xanthan gum? I've never heard of lining paste, do you have to use it or can you do something else? Are the almonds raw or roasted before grinding?

Hi Claire. It might be the yeast as not all of them you need to add water and sugar then leave aside. I used Allison's easy bake,mixed with the flour and other dry ingredients,worked perfect.xx

Yea but what is the filler in your GF flower??? if it's most likely RICE OR CORN, if that is the case > Your not gluten free lady, thats why it's thickening that easily they still contains also Gluten. orzenin and zein gluten. are in rice and corn. all grains have gluten #save100millionlives
