It's beginning to look a lot like Christmas 🤭
Last year, I was asked to demonstrate my recipe for Neuris (Neureos/Karanji) and I promised I'd put it up this year. So, here it is! These Goan Neuris are crisp, housing a delicately flavoured stuffing, and are absolutely yum :)

Ingredients:
For the Filling/Stuffing:
1/4 Cup White Sesame seeds
1 Tablespoon Vanaspati/Ghee
1 Cup Fine Semolina (Rava)
2 Cups fresh, grated Coconut
1/4 teaspoon Cardamom powder
1/4 teaspoon Salt
3/4 Cup Powdered Sugar (can be altered as preferred)
1/4 Cup chopped Raisins/Sultanas
1/4 Cup Tutti Frutti (optional)
Chopped Nuts can also be added
For the Covering (Pastry):
2 Cups & 2 Tablespoons or 250 grams All-purpose flour (Maida)
1/4 teaspoon Salt
2 Tablespoons Vanaspati/Ghee
3/4 Cup Milk
Flour for dusting
Oil for deep-frying
Yield: 40-45 Neuris (Re-using the trimmed excess flour)
Tips:
•Roast the Semolina and Coconut well. The sweetness of the filling can be altered depending on preference. Add chopped nuts too.
•While making the pastry covering, be sure to rub the flour well with the melted Vanaspati/Ghee; do it for a few minutes to make sure no small, solid lumps are formed. Add room temperature Milk (as needed) to form a soft, smooth dough. Knead it well, before and after resting it.
•Seal the Neureos properly. Apply water along the periphery with a cotton bud, and press well. Be sure to not trim away too much; leave the border with sufficient width. Design with patterns & get creative :)
•While frying, make sure the Oil is not too hot. Keep the flame on minimum (use the stove's smaller burner), fry each side for approximately 2 minutes, then increase the flame to medium. Keep flipping till they attain a golden brown colour. Turn off the heat for a couple of minutes before the next batch. Drain on kitchen towels.
This way, (1) the neuris don't get many large blisters, and (2) they stay crisp for many weeks.
•Once cooled, store in airtight containers. The longest I have kept Neuris are for about 2-3 weeks; they are finished by then🙂
