Today we are cooking Red Mullet and I’ll also explain how I like to find and hunt these fish while I’m spearfishing. On the East coast of Australia we know them as the Black Spot Goatfish. They also commonly go by the name of Barbounia in the Mediterranean. We are going to make a beautiful fish stock with the bones and skins from these fish. Then we’ll use that as the base for a super creamy miso mushroom risotto.
