I'm sure there's still a lot of improvements that could be made here, and I doubt the gdscript implementation using Node2D in this video is anywhere near as efficient as the built-in one using ParallaxLayers and ParallaxBackgrounds, but this works more intuitively for me, so maybe some of you will find it useful as well.
