Ingredients: 1 onion - sliced 3 cloves of garlic - finely chopped 2 tbsp oil 1 carrot - chopped salt 4 small potatoes chestnut mushrooms 2 bell peppers (red & yellow) zucchini 2 tbsp tamari 1 tsp smoked paprika 1 tbsp cumin ½ tsp cinnamon 1 tin beans - rinced 1 can chopped tomatoes 2 bay leaves 400 ml (?) veg stock 3 tbsp tomato pure ½ tsp black pepper handful of spinach

Hey guys! Traditionally we would use lard, alternatively sunflower oil for sauteing the onions in gulyás=goulash. No mushrooms but meat (obviously not for us), absolutely no bell peppers but the light yellow Turkish kind of pepper that we have in Hungary, no courgette. We would add parsley root and celeriac (local produce), no tamari :) No smoked paprika, we'd rather cook it in a cauldron (I like cooking outside as well as smoked paprika though) no cumin, go with caraway, it is more accessible here and no cinnamon either. Cinnamon is a distinctly sweet flavour here. No tinned tomatoes or spinach but probably chopped fresh tomatoes. Actually, we have two goulashes, one made with beans and the other is with meat only. In fact, goulash is a meat dish, like a stew and Goulash soup is the soup with vegetables and homemade dumplings (nokedli). This rather looks like a Mexican dish to me :) I mean, I love your channel, but this is definitely not a Hungarian dish. Of course, this could be called a Hungarian inspired dish as everybody is entitled to his/her goulash :) No offence, just sayin. Anyway, I will try this recipe and let you know how it went :)

As a hungarian, I was waiting for this! The BEST hungarian dish! Though we usually put more than one tablespoon of smoked hot paprika (no hungarian dish without it though...) into a gulyás! :) Also, not a really vegan meal, but the smoked beef gives it a smokey falvour. I think it's possible to buy liquid smoke today, it's a great alternative if you want to stay meat-free. Awesome guys, awesome!

was just thinking of my mom's goulash. kinda craving it. spiral noodles, ground beef, tomato paste and so much cheese that when you pull the spoon out you always get strings. but I can't eat that anymore. I'm going to have to give your a try. looks yummy

I'm Czech and we tend to fight with the Hungarians over who invented goulash first. You can get different variations in all of the former countries of the Austro-Hungrarian empire, but none of them is anything like this. You guys are really funny but this is so so far from goulash as a concept, regardless of the meat replacement issue. The only thing holding the fort is the paprika and, as someone said here, not enough of it. So, I'd suggest this - do a long slow-cooked stew. Use plenty of vegetable stock (the meat stock for goulash is what gives it the flavor and you need to replace that somehow), use bay leaf and whole allspice to give it some depth. Do a base of onions, garlic and root vegetables that are cooked slowly into a very tender state, perhaps partly pureed to give it some thickness. Beans can replace meat, why not? Thinly sliced tofu might be an option or extruded "soy meat" which is what Czech vegetarians use. But don't make it into a vegetable soup, because normal goulash has very few vegetables. Serve it over, let's say, gnocchi. Here in this country, it would be dumplings, but that's way too elaborate. A Croation version mentioned below is with gnocchi, so why not? The main point of a goulash is that it's basically a stew-like sauce with meat served over something else or eaten with bread as a major part of the recipe - something to soak up the sauce. We also make a "goulash soup" that includes potatoes as the main starch and is a bit thinner (again, virtually no other vegetables besides the base). Peppers look great here, but I don't recall ever seeing them in anything associated with the goulash idea, with the exception of hot peppers, or perhaps also used for decorative garnish. You can also make it into a hot goulash. Curly parsley would be the garnish of choice, yes, even though it's much stronger than flat-leaf. So, boys, a nice try, but I would challenge you to a follow-up that follows the principles of the real thing.

Hi, guys! Loving all your videos and recipes! In this recipe and some others, you mention using tomato puree. Here in the US, tomato puree is literally pureed tomatoes--a little thicker than canned tomatoes, but more on the liquid side and pour-able. It looks like what you're using is what we in the U.S. would call tomato paste?

Just watched this with my Hungarian girlfriend, funniest experience ever watching her get mad about how nearly everything was wrong, shouting no no no 😂 She's currently on her phone telling her mother 😂😂 When she said mushrooms I think her mother said jesus christ. The courgette, tamari, peppers were not popular either hahaha. I love how animated they get about food, even the wrong order of tomatoes, the type, the paste. Love it.

I like gulaš a lot but I'm from Croatia and not Hungary, and it's really not the same one. There is no vegetables and we eat it with gnocchis ! I just made one to try a vegan version, I think I'll make an interesting video out of this recipe. But I put waaaaaaaay more paprika than you do guys :p By the way thanks for your videos, they're always interesting and inspiring !

I made it last night and it was very good. However it didn't really have that unique Goulash taste to it. Almost tastes kinda like your Chili recipe. Is it because you used Cumin instead of Caraway seeds ?

Should always cook off your tomato puree. Adding it to a wet pan leads to bitterness. Add it when your sautéing the veg...
