Grandma's Dump-Stir Cake
1 cup (227g) buttermilk
2 eggs
2/3 cup (132g) vegetable oil
1 teaspoon vanilla extract
1 1/4 cups (150g) all-purpose flour
1/4 cup (28g) whole wheat flour
1 1/4 cups (250g) white sugar
1/2 cup (42g) cocoa powder
1 1/2 teaspoon baking soda
1 quart cream
powdered sugar to taste (probably about 1 cup)
Strawberries, sliced and stemmed
Preheat the oven to 350°F.
In a large bowl, whisk in the wet ingredients, followed by the dry. Grease 2 8-inch cake pans with oil or butter and then flour them lightly. Pour the batter, dividing it evenly. Tap the pans then bake them until a cake tester or toothpick comes out clean -- about 25 to 30 minutes. Allow them to cool completely.
Whip the cream and sugar until stiff. Frost the first cake, then top it with an even layer of sliced strawberries. Top it with the other cake and frost the whole thing. Slice and serve.
