Here’s the thing. As a Sicilian woman (from Cleveland), I LOVE to see Italian recipes prepared the way my family has always made them. Veal meatballs, pecorino and escarole for sure. Thank you for sharing a legit recipe with non-Italians. But... for my family, wedding soup calls for a very specific soup noodle. Since it’s supposed to call to mind a wedding, we always use rings bc they look like wedding bands. Something only we would ever notice or think about, lol. Having said that, I love your channel and appreciate all you do.

This has been in rotation in my household since I first watched it back in 2021. Husband isn't big on bitter(ish) greens so used a 50/50 mix of escarole and romaine lettuce. Made it as a starter for Thanksgiving dinner starting in 2022, and my family loves it. Didn't realize how much until this past Thanksgiving when I decided not to make it. My parents, sister, and nephew were aghast that we weren't having this as a first course. And now finding it hilarious that as I'm typing this, husband texted me from work asking if we can have this soup tonight. Definitely an awesome recipe!!

My grandmother would make a dough with bread crumbs, Romano, spices, milk and egg, then roll the dough into little logs, dry them a bit in the oven and slice medallions to add to the soup. And she always used acini di pepe pasta - So good! Thankfully my mom makes it now that grandma is gone.

Grandma would be proud I'm sure. Grandmas are the greatest. Mine used to wake up before anyone else and fill the house with the smell of bacon. We get up to that smell and coffee too. Then it was all laughter and smiles as she poached our morning eggs in the bacon grease. Yep, those eggs would float and crisp up so nice. After breakfast we'd sit on the old porch in the morning dew and play dominoes or cards. She loved games. Man I miss mine too...

in Romania we call it "ciorba de perisoare" but it is a meatball soup. Ingredients : root ( carrots, celery, parsnip, parsley ), meatballs ( pork, veal, beef, mixed pork-beef, chicken meat seasoned + rice if you want ), tomato puree. Season it when all is boiled ready with fresh chopped parsley leaves and as an option sour cream.

Yes..I always had moms wedding soup on Thanksgiving... This is how we would eat too.. mom put cheese tortellini..sometimes shredded mozzarella..was an option on the table.and grated parmesan...mmmmm. Good job...

As a chef, I'd also like to nominate romaine lettuce as a suitable substitute. It's overlooked as a cooking vegetable, but is wonderful in soups/stews/ect where you might use vegetables like kale, char, etc. It has this lovely waterlogging effect too, that packs it with flavour in a broth. I first discovered using romaine like this, from a Chinese cookbook(actual Chinese, and not Chinese-American), that I had to have Chinese friends translate for me back when I was maybe 13 or 14(around 1994/5).

Looks delicious..Basically make it the same way but I like to saute the meatballs in a little olive oil before throwing them in. I also add a half or whole 8 oz of tomato sauce and some parsley. My cousin does it like you. It's such a good soup. Happy Thanksgiving Steve!!!

I so love your recipes and simple explanations. No Drama! I have followed family traditions as well, though much older than you, serving "Wedding Soup" at Thansksgiving. I vary slightly, using beef for the meatballs and fry them first. I haven't used a mirepoix previously, but will now, as the added flavor makes sense. the pasta was always the tiny star pastina. The majority of your recipes are virtually identical to my family's. I am trying to replicate those I have never tried. Great You Tube Channel!

Nice! We have a version of this soup in Bulgaria also. It does not have pasta in it though and we just mix the mince with some herbs like summer savory and a little bit of rice. We call it "Balls Soup" :D

That looks delicious maybe I'll add that to our pre Thanksgiving meal. I have such a multicultural family our Thanksgiving dinner consists of traditional turkey, mashed potatoes and gravy, sweet potatoes homemade stuffing. Then we add in the tamales and the lumpia and pancit. We put on such a large spread that we all eat leftovers for days.

Continued. But I found where you are selling your cookbooks. Which I don't want. Just want amounts of cream etc. Things you had already measured out in dishes that I couldn't how much. It wouldn't kill you to list ingredients below. Instructions we can follow. At 80 I don't need to be collecting any more cook bk. SS check isn't big enough for that.

I understand why you plate pasta and soup separately, also probably cause your grandma did it that way and you dont change grandma’s recipe BUT you have a lot of flavour in that soup, imagine cooking the ditalini in it!

He discussed why he never adds pasta in the soup in the pasta fagioli video, basically the pasta absorbs too much soup and adds starch to it creating a different texture. Try it though, you might like it.

Are you sure that scarola is the right ingredient? Bcs it is used as salad usually, fresh rather than cooked. Broccoli is more likely I think, or spinach, or even cicoria.
