I've tried pan searing chicken, grilling it, broiling it, baking it, brining it, etc, but I've never made chicken SO TENDER before in my life. I always wonder what the secret is with chinese takeouts, and OMG it's baking soda?!?! I love you.

Adorable. And I like grandma’s secret process of soaking chicken in soda water rather than sprinkling dry on chicken. I bet that makes the difference. Good job!

Great work! You can also peel ginger with a teaspoon as it will remove the skin and leave more of the rhizome in place and help prevent wastage. Keep up the awesome videos!

I have brined (i.e.soaking chicken in salt water with seasonings) chicken breasts in the past to make them juicer. I really enjoyed this video that you did. You showed everything step-by-step, and you explained why the steps are in this order. I will definitely give this try, and I sincerely hope that you do more videos. Very entertaining.

Okay I'm back.. I just wanted to tell you that never in my life have I cooked chicken breast like that. It is the most delicious, juicy, tender, flavorful thing I have ever had. I would rate this way beyond restaurant quality. I'm never a big fan of adding meats to asian dishes because it's always just a let down, but you've literally changed my life. #1 in my house right now, tried it with steak prepared for stir fry, great results also. Asparagus can be expensive at times, especially when doing this every week. Do you think broccoli cut into strips would work? Bet you aced those exams.

yep ....i did aced my finals ...got all A's ...headed to U.C. Berkeley this Fall ...i've never made it with broccoli so i dont know the precise cooking times ...but using 14 oz of bell peppers only works ...how to tenderize the beef is a bit different ...i will try to make a beef stir fry vid this summer ...thanks so much for ur support!

Leave the sugar out. Substitute white vinegar or Apple cider vinegar for the wine or vermouth! Best that way because there's always too much sugar 😆

Why don't you use egg white when you velvet the chicken? All the other videos I've watched on velveting has egg white.

You said at the end, when tasting the chicken, that the chicken was tender because of the velveting and soaking with "baking soda" and I think you meant to say "corn starch" since you didn't use baking soda in this recipe as far as I can tell.

baking soda was in step #1; cornstarch was in step #2 (velveting). ...thank you so much for watching ....and dont forget to subscribe ...i will post more delicious recipes ...i'm working on a cookbook too

Please try my recipe one time please. You will NEVER make stir fry any other way again. I guarantee it. Taste the slices of chicken breast when they are done frying and tell me if u are not a believer. Please just try my technique once. jennyluvsfood I figured that much but didn’t have any. So I just used a cleaver and boiled it for a sec. it might turn out okay. Aaaand subscribed!

I like your recipe, but that's not how you velvet chilcken. Velveting chicken, is chicken that has been coated with cornstarch, seasonings and blanched in boiling water before you stir fry. The velvet chicken comes out very tender and moist and is not brown.
