Today, for the first time I had the incredible experience of grape-stomping, a traditional method of maceration used for a thousand years to help the fermentation.
Instead of using a wine press or other mechanized method, the pressure of human feet makes the job. The sound and the feeling of the grapes crushing under my feet were mesmerizing…thanks to my friend Olivier Paul-Morandini of Fuori Mondo Vineyards in Campiglia Marittima for letting me be part of this fascinating experience. I can't wait to taste the Libero 2022 with these Ciliegiolo grapes.
