The Greek pork souvlaki has many variations. One thing remains unchanged, though, and that is what characterizes it throughout the years, both before and after. What doesn't change, is the size of the meat pieces. That remains small. Old souvlaki masters had their secrets to achieve a flavor that would make their souvlaki stand out. One intervention they made at the end of grilling and before serving, was dipping it in a sauce. What could this sauce have? Each souvlaki maker had their own recipe; some were standard.
