Delicious! My grandma was preparing (in Romania) potato salad during lent or Christmas fast. She called it “Greek salad” and she was adding red onions in the winter or scallions in the spring, olives, lettuce, in winter she was adding delicious cucumbers pickled in salt and red bell peppers pickled in vinegar. We did not have olive oil in my childhood (first time I tasted olive oil when I was 20) so she was using sunflower oil and vinegar for dressing. I never tried with lemon, I will try for sure. She was also preparing many Greek dishes - moussaka or delicious “supa a la Grec” with rice, egg &lemon

I have some potatoes in the pantry that I need to use up, and this recipe is perfect! I like things creamy so I will make the one with yogurt, especially because I love yogurt and dill together. This is a great alternative to mayo-based potato salad!

When our family was in Greece about 12 yrs ago, we ordered the Greek salad. When it came, it was huge. A wonderful surprise when we got into it to discover a mound of potato salad.. Greek crusty bread and butter , what a meal. Back in Florida visiting Tarpon Springs they served their Greek salad the same way with potato salad in lower level. I always make my Greek salad that way now. My family expects it!.

Exquisite, delicious. It's been a very long time since I had such a good potato salad. My late wife was Greek and used to prepare it. When she passed away I tried to match her culinary skills. Unfortunately I never could. So thank you for this wonderful recipe. By the way I live in Victoria, British Columbia, Canada.

Love this potato salad. I grew up on this version using wine vinegar and Greek olive oil. I love yours.❤️ So pretty. I prefer your olive oil potato salad to mayo or yogurt.

Efxaristo Dimitra. I made the First Way recipe and doubled it. Fabulous and tasty and light. I followed the recipe and used fresh dill and fresh Italian parsley. My husband grilled steaks to go with the Potato salad. My whole family loved it including my parents so this recipe is Yiayia and Papou' approved. Looking forward to more summer recipes. I made my own version of this today with what I had on hand - steamed sweet potatoes, potatoes, beets, asparagus tips, spring onions, tomatoes, pine nuts, thyme, avocado oil and lemon juice. Oh my good-ness! Thank you again for the inspiration!

Anything that grows under the ground starts and cold water anything that grows above the ground starts in boiling water. An easy peasy way to remember what goes into hot and what goes into cold. :-) fresh oregano if you're not super careful is way too strong! I don't even grow fresh I just keep dried and if I did grow fresh like I used to I would tie it up and hang it upside down to dry and then just shake it over where I wanted it. I can't wait to try this this week. :-)

A few days ago I had a lot of trouble peeling my hardboiled eggs, which I normally start in cold water and bring up to a boil. Apparently, this happens with really fresh eggs and one way to make it easier to peel is to actually start cooking them in hot water. I tried this with the same batch of eggs and they peeled so easily!

Umm I never mentioned eggs but yes this happens with especially fresh eggs. If you put a cold egg into a pot of boiling water you're risking them cracking right in half. I'm room temperature Egg would have no problem. I voice type so I don't know why some things are capitalized and other things aren't and I speak to a lot of people here so I'm just not going to go back to correct one word it's only one word at this point! If your eggs are fresh the tablespoon of baking soda in the water makes a great deal of difference and helps the shelves just slide right off because you are adding bicarbonate to calcium carbonate which is with the egg shell is made of. I tell people to ask for the short answer! :-)

My mum made her potato salad using a dressing of her homemade mint sauce, which she poured over cooked and still warm potatoes, and added chopped spring onions (scallions). (Mint Sauce: fresh mint, white vinegar, sugar, salt and pepper). Easy and delicious!

Looks delicious - my Aunt always made a version of a no mayo potato salad for family events with red onion, parsley, oregano, red pepper flakes and the dressing was red wine vinegar and olive oil which she insisted must be put on the potatoes warm so they could absorb the dressing. She called it "italian" potato salad but who knows she wasn't italian.

I’m Cypriot and my aunt used to make it with coriander, scallions, mint, red onion, garlic and it is my favourite my mum used to make it with parsley but I like my aunt’s version better

Both versions are great. My parents simply added parsley and lemon juice with salt and pepper. And it was ALWAYS with Cyprus potatoes. I will try this for sure.

I am going to preparing it for my lunch nd yes for the idea that u have given to add boiled eggs , is a gr8 thing to do coz it makes it a whole meal nd quite filling actually ‘ but I won’t be using the yolks coz they don’t suit my body type ‘ nd one thing for sure dimithra is that am enjoying every recipe that ur putting up nd it’s a wonderful experience with ur dishes , specially the heavenly cold pressed olive oils that u use makes all that difference ‘ I love olive oil ‘ but in India it’s not largely used but I use it for my regular cooking on a daily basis ‘ that’s what’s getting me sunk into ur kind of heavenly cooking for a foodie like me ‘ dimithra ‘ good night !!!

Looks delish! How long do sundried tomatoes last in the fridge? Is it different when you get it in the jar or when you get them dry? I think’ that would be a great video (how t9 store things). Cause by the time I’m going to make another recipe with Kalamata olives they look all cloudy and gross, and I end up throwing g them out...

Mayonnaise and vegan mayonnaise are also preservatives and are extremely safe to take outdoors and leave in warm temperatures. The problem lies in what you put in the mayonnaise that is what may go bad not the mayonnaise and the mayonnaise will help Preserve whatever you have made because it is basically oil and vinegar lemon and vinegar whatever it preserves food. Potato Salad comes in so many varieties. It's probably one of the most brought potluck items (like faces, each person has their own) and I usually enjoy every unique one I've tried, but I cannot stand hard cooked potatoes. People who have a fear of overcooked vegetables often make bad potato salad.
