Green Beans and Eggs
Ingredients:
1 pound green beans, trimmed
3 large eggs
3 tablespoons butter
1 large onion
1/2 bunch of dill
Salt and pepper to taste
Instructions:
Bring a pot of salted water to a boil. Add the green beans and cook for about 4-5 minutes, or until they are tender-crisp. Drain the beans and set them aside.
In a large skillet, heat the butter over medium heat. Add the onion and sauté for about 1 minute until fragrant.
Add the cooked green beans to the skillet and toss them with the onion and butter. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring occasionally, until the beans are heated through.
Crack the eggs into the skillet with the green beans. Reduce the heat to low, cover the skillet, and let the eggs cook for about 4-5 minutes, or until the whites are set.
Once the eggs are cooked to your liking, remove the skillet from heat. Sprinkle chopped dill over the green beans and eggs.
Serve the green beans and eggs immediately while they are still warm. You can enjoy them as a standalone dish or pair them with crusty bread or rice.
Note: Feel free to customize this recipe by adding other ingredients such as cherry tomatoes, sliced bell peppers, or herbs like basil or parsley for added flavor and freshness.
