Ingredients:
250g Rawan ki Phaliyan (Cluster beans)
2 medium onions (finely sliced)
2 medium tomatoes (chopped)
1-2 green chillies (chopped)
1 tbsp ginger-garlic paste
1 tsp cumin seeds (zeera)
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chilli powder (adjust to taste)
1 tsp garam masala powder
Salt to taste
3 tbsp oil
Fresh coriander for garnish
Instructions:
1. Prepare the Cluster Beans:
Wash and trim the ends of the Rawan ki Phaliyan. Cut them into 1-2 inch pieces and set them aside.
2. Fry the Onions:
Heat oil in a pan. Add cumin seeds and let them crackle.
Add finely sliced onions and sauté until they turn golden brown.
3. Add Tomatoes and Spices:
Add ginger-garlic paste and fry for a minute.
Add chopped tomatoes, green chillies, turmeric powder, red chilli powder, coriander powder, and salt.
Cook the mixture on medium heat until the tomatoes are soft and the oil starts to separate from the masala.
4. Cook the Beans:
Add the Rawan ki Phaliyan (cluster beans) to the masala.
Stir well to coat the beans with the spices.
Cover the pan and cook on low heat for about 20-25 minutes, stirring occasionally until the beans are tender. If needed, add a splash of water to prevent sticking.
5. Finish with Garam Masala:
Once the beans are cooked, sprinkle garam masala and mix well.
Cook for another 2-3 minutes to blend the flavours.
6. Garnish and Serve:
Garnish with fresh coriander leaves.
Serve hot with chapati, naan, or rice.
