Recipe :
Green Chilli Sauce
Preparation Time: 20 minutes
Cook Time: 15 minutes
Ingredients:
300g Green Chillies
12 cloves Garlic
1” Ginger
1 medium Onion
1 medium Potato
1 ½ tsp Salt
3 tbsp Sugar
½ cup Vinegar
¼ tsp Sodium Benzoate
Method:
Wash, wipe and pat dry the green chillies. Remove the stems and roughly chop the chillies.
Roughly chop the onion and a peeled potato.
Take the green chillies, onion, potato, ginger, garlic and ½ cup water in a pressure cooker.
Pressure cook for two whistles and then allow to cool.
Add the sugar, salt, vinegar and blend in a blender to make a smooth paste.
Strain the paste through a strainer. Dissolve the sodium benzoate in 1 tsp warm water and add to the sauce. Mix well and store in clean glass bottles.
Red Chilli Sauce
Preparation Time: 20 minutes
Cook Time: 15 minutes
Ingredients:
200g Red Chillies
12 cloves Garlic
1” Ginger, roughly chopped
1 ½ tsp Salt
3 tbsp Sugar
½ + ¼ cup Vinegar
1 tsp Cornflour
1 tsp oil
Method:
Remove and stems from the dried red chillies. Soak in hot water for 30 minutes.
Heat 1 tsp of oil in a pan. Add the garlic and the chopped ginger. Allow the ginger and garlic to turn fragrant. Add in drained red chillies, ½ cup soaking water, cover and cook till the red chillies are cooked. Add the sugar and salt.
Dissolve the cornflour in a little soaking water and add to the chillies. Cook for about a minute. Allow to cool down.
Add ½ cup vinegar and blend to a smooth paste. Strain the paste through a strainer. Wash the blender jar with the remaining ¼ cup vinegar and add to the strainer. Strain to get a smooth sauce and store in clean glass bottles.
Soya Sauce Substitute
Preparation Time: 20 minutes
Cook Time: 15 minutes
Ingredients:
50g Mushrooms
½ cup Sugar
1 ½ tsp Salt
1 cup Water
¼ cup Vinegar
Method:
Finely chop the mushrooms. In a non stick pan, dry roast the mushrooms till the mushrooms are lightly coloured. Remove and set aside.
Add the sugar to a dry pan and allow the sugar to melt. Allow to sugar to caramelise to a brown colour. Add in 1 cup water and the mushrooms. Bring to a boil and allow to simmer for 5-6 minutes.
Add in the salt. Remove from heat and add in the vinegar and the Ajino moto. Strain through a strainer and store in clean glass bottles.
