Just a handy thing i learned doing my own deer and other stuff. Flatten out the ground before sealing it. It makes it easier to label it and it stacks way better in the freezer and thaws out 10 times faster when you ready cook it.

Good video! I've been processing my wild game for the past 37 years. Getting ready to butcher an elk this weekend that I got last weekend. Grinding meat for burger and breakfast sausage is always an ongoing experiment for me...but that's the fun! Straight-ground venison or elk has never appealed to my family. We do beef or pork fat in our grind. My wife likes a mix of elk and 80/20 ground round beef (2/1 ratio) from a custom butcher (grass-fed elk and grass-fed beef). We experiment with the ratio of elk to beef each year. The son and I really like a mix of say, 50% elk, 25% ground round beef (90/10), and 25% ground Boston butt (we call it bacon burger). We still tweak these ratios every year in a quest for the perfect ground elk! As for the killing of wild game, always believed it was part of the circle of life. At least hunting is more humane, as the wild game got to live a normal life. Thanks for the video!

Great video and perspective, especially comments for people that may hate hunters. Tagged two this season and as always butchered them myself and vacuum packed for the freezer to use throughout the year. Agree absolutely that it promotes respect for how we feed our families and gives a deep appreciation for what it takes to take the resource from field to table. Please tell Waylon congratulations!!

No way is deer straight organic. There not in a fence and eat out of every field that get sprayed fertilized and everything else. That said I have no problem with it. I'm not an organic fan but saying deer are organic is nuts.

i mix my venison with pork butt...pork is cheaper than beef fat....and then i have good burgers, meatloaf mix, and summer sausage....60/40 ratio...

I do the same thing with the labeling. My girls are so happy when they see it's one of their deer going to the table. I mix two pounds of bulk box bacon to ten pounds of deer. It works great. Keep these videos coming. We love them.

Get some bacon ends n pieces thst come in the 3 pound pack or so. Mix 3 pounds deer to 1 point bacon pieces and grind up. Best burgers ever

I've done that, but it sure does drive up the net cost since beef prices have soared during Brandon's admin. I usually use ground pork. It's much cheaper and accomplishes the same thing, although you do need to cook pork a little longer than beef.

We add pork fat from our GOS hogs we raise and butcher. We do 80/20 and it’s the best we ever had. Lots of ways to do it 😊. Nice job

Brother that's what I'm doing all day. Good Ole snow days here in southern KY. Right now just finished a back ham and after this video I'm going back to finish a front shoulder. KY season ended Monday night and I was blessed again this year to take a deer the last weekend of the season! Now it's time to bust some coyotes! God bless!

A funny deer story...true...one night i was on my way to some friends house. A lonely country road. Saw a small fawn on the side of the road. Put it in the bed of my old pickup. I went into their kitchen with the fawn over my shoulder and dumped it on the kitchen table!!!!! My friend hung it in his barn. Then told me that we had to inform the police cause i had broken the law!!!!! We could vet a big fine. This was before cell phones. The person that hit deer had gone to call the police. He knew what the procedure was. And it belonged to him. In a short while he came to get his deer....no problem!!!!!

LOL....Waddell jumped up on the soapbox there towards the end....BOOM...love it man! Just ramped right on up there! LOL.... I just happen to be eating some fried doe backstrap and prepping to cut up the remaining quarters for burger. You know it! I dont pay processors to take care of my animals. Hunting deer and trapping hogs makes for some fine burgers and sausage! And like you said...i know where it came from and how it was cut/cleaned/ and processed. Hey....for some great breakfast sausage, try the Leggs #10 blend...its my fav for a breakfast sausage.

Two things I do that you didnt cover, 1 Label all of my bags before I start, and 2 flatten the meat in the bag to about a 1/2 inch thickness then seal it. This really speeds up the thawing time. Good video. Thank you.

Hi Michael. You said it just as it is. Love that . Been watching you for a long time and really enjoy your content. We too process our own meat. Have done so for many years now. Can't beet feeling you get from processing your own meat' Knowing it's going too feed your family. It gets even better when you can share that process with friends or family that may not have the means to do this themselves. I farm and ranch in North central Kansas so I know full well what it takes raise food and take great pride in knowing that grains and cattle I raise go to help feed the world. I grew up hunting and fishing and continue to do so . It's too bad that the plant people are too stupid too realize just how much death happens just too feed them. I thank the good Lord we live in a place that we can live how we want. Hey if you ever get out this way look me up and maybe we can do a little hunting or fishing together. Michael, what size of building were you processing your doe in? I'd like to build a place to process my deer in the future along with a good spot to hang and skin them. We have limited space in our small, cabin kitchen, so a place to process will be great (we'll probably keep a freezer in it as well). Thanks! Great content.

I'll have to try that next time. we just go straight venison and use it all on your taco night, chili, or manwhich, or meatloaf kind of meals. I think the reason we don't just use it as a hamburger is because it is straight deer meat and has a different texture and won't stay together as well since it is so lean.

Brother, I’m all about that! First time my (20+ years ago) my wife got made at me was buying a grinder (a weeks worth of wages). It’s a big one. It has 10,000#s at least. And I have wore our 7 food savers vacs. I do briskets now for burger meat ( 80/20 ) and end up with 2 1/2 to 4 #s of fat left over. You can’t hardly buy ground at the store as cheap. I use that for my deer grind (70/30). Good eats!👍

This is kind of a cool coincidence. My son killed his first deer today "a nice Alabama buck", and I have recently purchased a meatyourmaker grinder along with other processing equipment. Great video. You nailed it. There are a hundred different ways to do this. Just do it the way you like it. I had the opportunity to help out the preacher at our church with some deer for his family because there youngest can not eat beef but can eat deer. It was a good time and feeling.

I know its an old video but I still enjoyed it as if it just dropped yesterday. I was brought up processing our own deer with my dad , grandpa , and uncles . It truly puts it in a more appreciative perspective when doing it yourself. Michael Waddell I process my own and do the ol taxidermy work on them jokers also . I add pork fat to my venison. I have access to pork fat chunks from a meat shop just down the road. Alternate chunks of venison and fat as I'm feeding the grinder, mixes it for you that way too. Lots of good methods to achieve the same goal. Good video!

Same here, although I often use ground pork and sometimes pork cutlets I buy on sale. Made burgers just last night and they were amazing. Pork fat tastes the best to me, although beef fat is excellent, too.

Smash the burger flat before you vacuum it. It lays nicer in the freezer and vacs better when you expose more surface area. And label it before you stuff the bag.

My personal taste is 80% deer/ 20% beef fat. I'v learned running 80% deer- 20%lean beef (chuck, whatever is on sale) then 80% meat, 20% beef fat. This mix usually pleases everyone.

Hey Michael a true wisconsin deer tick here, use bacon ends and pieces for your grinds about 3 pounds of the bacon ends to 10lbs of venison for the best bacon burgers u have ever had goes great in anything chili, tacos etc.

We label our bags of deer meat when we are processing when our two kids kill them. That lets them know they are feeding the family. Good video!

We always mix 20-25% beef fat in we run the fat and the meat through a breakdown plate then mix it all together and run it through a 3/16 plate and into the bag

I am considering getting a Meat Your Maker grinder after seeing several KZitemrs using it. My hesitation was after researching the holding company American Outdoor Brands (AOUT) ESG report. Then again most companies are falling in line with the ESG global policies.

I took roughly 1lb of venison and added a 1lb pack of Tennessee Pride Sausage to it. STILL tasted like burger and couldn't tell there was sausage in it. Also, I use a food processor as opposed to a grinder. Makes the meat more fine and mix well. At least for me.

Some very great information on how to prepare your venison. I really have enjoyed watching you guys through the years. I started watching back around 2006 after my on-the-job accident. I share the same as you guys. God put certain animals, fish, birds, on this earth for us to eat. In fact, God killed the first animals and made clothes for Adam and Eve because the fig leaves did not cover them enough.

My brother lives in northern Wisconsin where we hunt, I got a buck in November. I'm thankful I got 4 deer a year ago & still have some left. The prices at the stores are crazy, it's so nice to go to the freezer pull some of God's goodness out & mmmm yummy!!!!!!!!! Good video Michael!!!

I like to make my burgers with 10% pork belly. Just enough to hold it together and add a lil bacon flavor, mmmmmhhh good! Btw love that pressure sealer, but man that thing is huge. Love the channel!
