Is there any historical cases of use of larger swords like this *with* a shield? I imagine it to be impractical but I could be wrong

Not that I've seen, but never say never. At most, I'd expect to see a shield toted for missile defense and then abandoned when engaging in the melee. There are ways to wear a shield forward and use a weapon in two hands, but big swords are poorly suited to it. That said, I will be getting my hands on a heater shield soon and you've given me an excellent video idea.

I also like using rotational movements with a double overhand/pronated grip on the pommel and ricasso. I keeps the opponent guessing, but does require a high degree of mobility.

It's inconvenient for you to rotate the montante, because they didn't rotate it that way)) Starting from Monte and ending with Figueredo, the main blows of montante are the ascending diagonal and injections. Thrust is done with one hand holding the sword with the left hand at the pommel described only di Grassi.

Would there be any reason to two hand grip the pommel, kinda like a Baseball bat. I play a boffer fighting game and a lot of people really good fighters switch to that grip for more powerful shots or to get around shields

I think if you can make it work, it works. It takes the main advantages like leverage and impactforce from the Montante. If you want to use a weapon which has more punch but the same reach or more, you would have taken an halberd.
