2 tbsp of ghee
2 packs of vermicelli
2 pieces of cinnamon stick
A couple of cloves
5 cups of water
3 cans of evaporated milk
1 can of condensed milk
1 tbsp of custard powder
Raisins
Red cherries
Peanuts
1. In a large pot, melt 2 tablespoons of ghee over medium heat.
2. Add 2 pieces of cinnamon stick and a couple of cloves to the pot.
3. Add the 2 packs of vermicelli to the pot and cook until lightly toasted and golden brown, stirring occasionally.
4. Once the vermicelli is toasted, add 5 cups of water to the pot
5. Cover the pot and let it cook for 15 minutes, allowing the vermicelli to absorb the water.
6. After the water has boiled down, add 2 cans of evaporated milk to the pot.
7. Stir well and allow it to simmer for a few
minutes.
8. Add the third can of evaporated milk along with 1 can of condensed milk to the pot.
9. Mix everything together thoroughly.
10. In a small bowl, mix 1 tablespoon of custard powder with a little water to form a smooth paste.
11. Add the custard powder mixture to the pot, stirring continuously to avoid lumps.
12. Cook until the mixture thickens to a cake-like consistency.
13. Once the vermicelli mixture has thickened, add some raisins, red cherries, and peanuts to the pot.
14. Stir well to distribute the fruits and nuts evenly.
15. Remove the pot from the heat and let it cool slightly before serving.
16. Slice and serve your delicious Guyanese Vermicelli Cake!
