Glen, I worked at a pizza crust factory as a dough maker. Even when we were making 160 kg batches of dough we would feel them to see if they moved correctly. (if that makes sense) Also your tortilla hack is used to make frozen pizza crusts. We ran our platens at about 350 F/176 C for about 5 seconds but cooking wasn't part of the equation. Just forming the dough for freezing and then other plants put their ingredients on them. We served a number of chains and freezer section brands.

@@andrathiele2638 the press works fine for corn tortillas.in fact, the press was designed for corn tortillas. Many Hispanic people don't use the press for flour tortillas and only use it for the ones made from corn.

There are electric tortilla presses to make flour tortillas. I have seen them here in Baja and are about $30 US dll. Saludos.

Tortilla presses are also good for papusas, chapati, and basically anything you need near paper thin. So they aren't as single-use as the name would suggest.

Glen, love this technique! I too over fill my tacos, and found a method of holding my tacos to prevent all the goodies from oozing out. Take your little finger and fold the end up, holding your finger in place to reinforce and hold in the fillings, and what do you know, you can even put more goodies into your taco!!! Please give this a try! My way to pay you back for all your good tips and making my cooking ever more delish!!!!!

Hey Glen..A few years ago I lived in Socal and in Riverside there is a place called oho de agua (waterhole) and there I saw a lady (Grandmother) that brought out a large bowl of dough and by hand, she made the tortillas 1 by 1, about 50+ and all the same diameter. To me, this was the best tortilla I have ever had and my best friend from Mexico said this was the closest to being real from Mexico.

I did this and it works! I might be looking at different recipes as I felt my tortillas were a little greasy for my tastes, but otherwise, what a great idea!

Take Glen's recipe and try reducing the fat to 80g (lard or butter). I also don't use baking powder. I'm rolling out with a pin and making a big mess, good to know this method works. Time to order a cast iron press.

Glen, Head over to your local Indian market and grab an electric roti press. Both sides of the iron are heated like a waffle maker, but flat. Makes very good tortillas quickly. Pre-COVID, I bought two so I can bang out a few hundred quickly for big events at work or family events with my beer keg rotisserie (thanks to you for that!)

I finally got my tortilla press built, modified off of, and thanks to Chudds awesome video showing how he did his. Now it’s seasoned and ready to roll so I’m hunting for my initial tortilla recipe. Have you experimented any more with your recipe? I noticed at the end of this video you mentioned trying milk again. I searched your videos and never noticed a newer tortilla video than this one that is a year old now so thought I would check. Thanks for all your great content, I love all your cooking shows!

Back in the late 70s early 80s I took cooking lessons from a lady who was 4th generation American of Mexican descent. This was also the era in which lard was bad for health. She only used 1 tablespoon of lard for 12 tortillas however she used full amount of lard necessary for tamales. Since I am so close to the border I do not make tortillas very often since there are excellent sources for freshly made ones. The press is never used but are hand patted out. Really like that you used the food processor for mixing the dough. Will need to try that.

Great video, I pretty much use this recipe and method exclusively for Taco night. Is there a way to get to burrito-levels of thinness from these things? I want to buy 12 or 14-inch press but I don't think the tortillas will be thin enough.

I used your technique for keto tortillas (based on Diedre's Kitchen bread recipe minus the yeast). I actually gasped with glee when my first try didn't shrink to the size of a drink coaster. They cooked beautifully--thanks for a wonderful idea.

Not sure if it’s a problem in Canada, but in the US there’s a possibility of lead in hot tap water. Microwaving water is pretty easy. Stir to avoid hot spots and add water if it’s not at the right temperature. (I know there’s no microwave in the studio.) Great video though :)

It's really good made with beef, but the recipes I've been working on are Lard. I can get pure lard at every grocery store here; beef tallow is hard to get, and I usually have to make it myself.

Great idea! Had never thought of putting the tortilla press on the electric cook top!! Wowza! My question is - on all these video's I watch, it seems imperative that the tortilla should puff up and will only do so by cooking on one side for about 40 seconds give or take, then flipping, then flipping back to the original side. THEN they puff - soooooo, I'm wondering about the texture of the finished product - AND I don't think you tore one apart so we could see inside it.......just wondering.

Best tortilla hack I know: lightly pan-fry in a shallow layer of oil the tortilla at high temperature, just enough to get the outside crunchy, but the inside is still soft and flexible, so that if bent the tortilla will crunch but the soft inside will hold all the crunchy bits. Also, add salt to the outside of your tortillas.

Here in Texas, at some of the HEB grocery stores, they have a tortillaria setup making them fresh. Grab a bag of warm tortillas and dinner is extra yummy!

Medium is about right for heat and no need to grease the press.

@@TheHuesSciTech It means about in the "middle". It may depend on your stove. It could need a little more or less. After you cook the first one you will know by the color how to adjust the heat.

Love your shows. I can understand what you are doing here but noticed you did not put ball of dough in centre of plate instead to one side (well it looked like that) yet seemed to fill base perfectly. I have a aluminium press wonder if can be used same way?

Tried this today... was a bit of a flop for me! I either dealt with the dough balls sticking to the top of the press if the heat was too low, or they burnt if the heat was too high. Finding the sweet spot was quite finicky and it was honestly easier to just spend the three minutes in advance pressing them between two sheets of parchment paper and then cooking them in a pan!

Try einkorn flour one time too. We use it with Jenny's recipe at Jenny Can Cook but use bacon fat instead of the oil she uses.

Our grocery stores in Yuma, Arizona sell uncooked pressed tortillas. They take 90 seconds to cook on a flat tip or pancake griddle. So good.

I have an electric press but you really are supposed to just press it in the press for a few seconds. You take it off still pretty raw and finish it on a comal. The heat just cooks it enough so the gluten doesn't pull it back out of shape.

Oh, about the mexican street food, they marinate the meet commonly, with basic acidic fruits, from orange to lemons, sometimes pepper, and normally onions. That's after slicing it. Salt and pepper. Knowing what we know meet marinating, I'm not sure how much that helps, especially since they prep a day in advance. Hope that helps

One of my aunt gifted me a tortilla press it's not black but shiny metal. Do you think it would also work? She bought hers in California. Maybe if I grease it a little she tried making tortillas before and got frustrated because she didn't heat the tool just used it cold.

After watching your excellent video, I ordered a Victoria Tortilla Press. Delivered today. Care instructions: "NOT for cooking or heating. Do not use press on any heat source for cooking." Guess I'll just go for it. What could go wrong????

Hot water from the tap usually comes out of a hot water tank and has heavy metals in it. Just heat some water in a pan or kettle.
