Guthu Vankaya kura
Take a kadai and roast 2tbsp peanuts and 2tbsp dry coconut on medium flame. Add 1tbsp sesame seeds, poppy seeds and turn off the stobe. Keep it aside until cooled down. Mean while, take small sized brinjals and slit them slightly. Soak them in salt water. Now, take a kadai and pour 200 gms oil. Cook the slit brinjals are cooked completly, remove them from kadai and keep them aside. Now, in the same kadai, add feenugreekseeds, mustard seeds, cumin seeds and onion seeds. After all the seeds are fried, add 1 chopped onions, 2 green chillis and chopped curry leaves. Roast them untill turnedbbroen, then, add 1tbspn ginger garlic paste.
Grind the roasted oeanut and coconut powder and pour the mixture into this kadai. Also, add coriander powder, salt, turmeric, garam masala and red chill powder. Roast the paste until oil gets separated. Add the fried brinjals in this paste. Close the lid after adding 1/2 cup water.
Tasty dish is ready to serve after everything is cooked.
