Hakka-style Stir-fried Eggplant
Ingredients:
600g eggplant
20g garlic, minced
25g basil leaves
15g chili pepper, sliced
2 tbsp. oil
50ml water
Seasonings:
2 tbsp. soy sauce
1 tsp. sugar
Instructions:
Wash the eggplant and cut it into long pieces.
Heat 2 tbsp. of oil in a pan and add the eggplant. Let the eggplant evenly coat with the oil, then add water and cover the pan. Simmer for 3 minutes.
Take out the eggplant, leaving a small amount of oil in the pan.
Heat the remaining oil, add minced garlic and sliced chili pepper and stir-fry until fragrant. Then add the eggplant, soy sauce, and sugar, and stir-fry until the eggplant is soft.
Add basil leaves and stir-fry until the aroma is released. Serve hot.
