This was very helpful. I'm glad you showed the steps re: when to SCORE the skin and thickest fat BEFORE initial baking to 115-120 degrees; then, AFTER that temp is reached, removing the skin & excess fat BEFORE putting the glaze etc. on the meat. Tip re: making shallow vertical slashes in the meat @ this stage (pure genius!) was new to me. You would think I'd know all of this by age 72, wouldn't you?! But I didn't. You made my day! Thank you for a sensible, easy-to-follow video! Just great!

This was one of the first videos I made, and I wasn't very good at editing it. I'm better now, but still need more experience. Anyway I hope your Ham turned out good, make any changes you want; in order to make it your own. You can make a Pineapple glaze or dipping sauced or use Blackberries or Cherries or most anything your taste buds tell you to try.

At about the 1:37 mark, I mention that the oven is heated up to 300 degrees. In the future I think I will try to mention the temperatures a couple of times as it can be easily missed.

I was taught to spear the ham with cloves...every inch square or so...and with toothpicks layer pineapple slices over the whole ham before baking, covering pineapple with glaze also

It is best to not cook by time, as there are too many variables. It is always best to cook by temperature. Like most Hams, this one is already cooked, so it can be eaten cold right out of the package. But, if you want to put a glaze on it then cook (heat it up) to an internal temperature of 115 degrees Fahrenheit. Then remove it from the oven (or cooker) and score it like I did in the video, apply whatever glaze you would like....continued in next comment.

+Dee Espinosa ...I don't like to cook by "Time", because the cooking situation will never be the same for everybody. But, the temperature will be the same for everybody. But as a rough estimate I would guess ...an Hour to 1 and a half hours. If it takes a little longer than you want, I promise you everyone will survive the wait, and get to eat your delicious cooking soon enough.

Continued from comment below........then cook (heat it up) until it reaches an internal temperature of 130 degrees Fahrenheit as I show in the video....it these temperatures are not the exact same as I said in the video, do not worry. These I am giving here will work just fine. The longer you cook it, the more likely it will dry out. I have found that going past 130 degrees will make it more likely to become dry. If that happens to you, just have some extra glaze, .......continued again......

I have not ever done that; however, you shouldn't have any problems that I can think of off-hand. Use only enough water to cover the Ham (this is called Braising) and adjust the heat so the water is just moving (simmering). Overnight may be too long though. You may want to practice it once, if you are planning it for a special meal...Ham Shanks are fairly cheap. If you have a "roaster oven" that would probably be the best way to do it.

I'm sorry, I prefer to cook by temperature instead of cooking by time. The clock doesn't know how big or how thick the food is that you put in the oven. It also doesn't know what temperature the food is when you put it in the oven. So, if you cook by time, the food can end up being under-cooked, or over-cooked. Cooking to the proper safe temperature will guarantee that it is safe to eat, and not partially raw, or dry and tough. There are some exceptions, such as Beef Brisket and a Pork Butt, where they will cook for many hours at a low temperature, so they will be tender when finished.

Thank you for your reply, but it doesn't help much unless I have at least an idea of how long it might take to get to 120 degrees the first time --at least an estimate...then how long we should expect it to get to 140 degrees the second time at 425 degrees or whatever..We need to have at least a rough estimate if we are having guests over so we can plan...will it take 1 hour or 2 hours the first time, then another 1 or 2 hours the second time (after trimming off the fat and putting it back)..your video is great btw, so thank you for that! We just need some more specific time frames, even if they are general..i.e., 15 minutes or 1 hour, etc..

If you plan for about 1hour-to 1and a half hours...that would be a good estimate for the time it would need to reach about 110 degrees Fahrenheit, cooking at about 300 degrees. Then take it out and remove the tough skin pieces.....turn the oven up to at least 375...400 is even better. Put the glaze on the Ham and back into the oven to "set" the glaze. Cook it about 20 more minutes, but don't let the temp probe go over 130 degrees. Watch it carefully so the glaze doesn't burn. If you want to make it more fun....you can use a propane torch to "set" the glaze even better...BUT PLEASE BE CAREFUL.

Hams like this are already cooked, and can be opened and eaten without you cooking/heating it up. So, I don't think you will gain any advantage by cooking/heating it the night before, as it will run a greater risk of drying out every time you heat it up. If you want to, you could prepare it and get it ready to put in the oven the night before. Then wrap it up, ( in the pan, if you can fit it in the fridge) then you can just put it in the oven the next day and heat it up to 125F for your meal.

None, It is a seasoning that I like, so I use it. You can use any seasonings that you like the taste of. Life is short and you only get one shot at it, I decided to try some different things and see if there was something better than what was available at the local store. Try some new foods, you will like some. And some you may not like.

Very nice. I used Your cooking method and Our ham came out perfectly cooked and tender. I would have never trimmed all the fat off like that. Now I know why I never liked ham. It was always greasy. This ham no fat or grease. Thank You. Happy Thanksgiving 2013. :)

Why remove the fat, that is flavor and keeps the meat juicy. When you plate it up, just don't eat the fat, and/or use a fat strainer measuring cut if you make gravy. Yes, ham gravy. I guess I don't usually glaze my hams, or if I do I buy a spiral cut ham, and glaze that the last 30 minutes of cooking.

The shiny side and the dull side of the foil have the same thermal properties. On Ham, it does not need to be cut against the grain, like you need to do with beef brisket or skirt steak.

Totally not for me. I dont care for smoked meats and I HATE sweet or glazed hams. I love a classic plain ham. And for Gods sake leave the fat on it. Its my favorite part. That and the little tender ring near the bone.

Trying to make this type of ham and have it be hearty healthy as possible for my Dad whose had 2 heart attacks I'm beyond grateful for all the info here. I won't use the glaze, that's an easy edit. Perhaps you should make your own video to your liking and skip judging others.

Understandable.....good Video equipment is not in my financial life. So, I was using the on-board microphone, which wasn't the best. I recently got a new microphone, hopefully it will provide me with better audio in future videos. I am trying to get back to making videos sometime soon, better audio is a priority.
