In this video, I hang a whole slab of pork ribs in the Oklahoma Joe's Bronco. I season the slab of ribs using Meat Church Holy Cow. I use Kingsford original for my heat source and Mesquite Wood chunks. The internal temperature of the Bronco was at 250f. I hung them ribs for 2hrs and then foiled them, adding butter and honey. I cook the ribs wrapped for 1hr and 30 minutes. I then remove the ribs from the foil and place them on the cooking grate to firm up. The last 10 minutes, I glaze with them with Texas Pepper Jelly Rib Candy. I remove it after 10 minutes and slice into the slab of ribs. 3-17-23
