Taizo San, I really enjoyed watching your videos! I love how you broke many "rules" when making pour over coffee. I was surprised to see that you don't need a scale. It looks like temperature and grind size are the most important elements. Not sure if you've heard of an English coffee content creator James Hoffman. He likes to use very hot water. I followed his method and made delicious coffee! Will try your way next time! I'm a big fan of fast brewing
