Harissa & tomato pasta
Serves 3 - 4. I used half the regular 1lb pasta pack. If you want to use the whole pack, double the recipe
You will need -
1/2 lb pasta
1 cup cherry tomatoes
1 tbsp tomato paste
1/3 cup harissa paste (I used spicy harissa, but despite that, it wasn’t that spicy. But it could just be my indian palate, so if you don’t like spicy food, use mild harissa)
3 cloves garlic minced
1/2 cup heavy cream
3 tbsp olive oil (+ more to finish at the end)
1/2 tsp salt
1/3 cup grated parmesan (+ more to finish)
Start by adding oil to a skillet on medium heat. Add your garlic and saute for a minute. Then add your cherry tomatoes and saute for another 2 - 3 minutes. Then add the tomato paste and harissa sauce and mix until well combined. Use a masher and mash the tomatoes. Be sure to wear a white t-shirt when you do that.
Once the tomatoes are mashed, and the sauces are well combined, add the heavy cream and mix. Then add your cooked paste and the parmesan and stir until well combined. Serve with more parmesan and olive oil
