Ingredients: 1/2 cup butter, 1 cup brown sugar, 1/4 cup corn syrup, 1/2 teaspoon kosher salt, 1/4 teaspoon baking soda, 1/2 teaspoon vanilla, 1/2 cup popcorn kernels, small bowl of broken pretzel pieces. Optional Add-Ins: sprinkles, marshmallows, caramel bits, chocolate chips, peanut butter chips, chopped nuts, candies.
Directions: Preheat oven to 250 degrees. Pop the popcorn (in batches) into a large and deep roasting pan. In a heavy saucepan, melt the butter and add the brown sugar, corn syrup, and salt. Bring to a boil over medium heat, stirring often. When the mixture begins to boil, lower the heat to low and do not stir for 5 minutes. You're looking for a slow boil at this stage. After five minutes, remove from heat and stir in the baking soda and vanilla. The color will lighten and it will look foamy. Pour the mixture evenly over the top of the popcorn. Quickly stir the popcorn to coat evenly. Place the pan in the oven and bake for an hour, stirring every 15 minutes. Make sure you scrape along the bottom. When there is 8 minutes remaining, remove the pan and quickly add your optional ingredients (I suggest always adding marshmallows). Stir to combine, then return the pan to the oven. Stir occasionally and remove when marshmallows just begin to melt. Stir while still in the pan, then dump onto waxed paper and quickly break up the clumps with a spatula. Allow to cool completely.
