For this recipe you will need:
20-25 elderflower umbels
4 lemons zested and juiced
2.25 lbs granulated sugar
1 liter boiling water
1. Harvest elderflower umbels, rinse and strain.
2. Zest and juice lemons (substitute lemons for grapefruit or other citrus if necessary).
3. Strip florets off of stems of umbels and add to non-reactive jar.
4. Add sugar and pour over boiling water. Stir til combined.
5. Let cool and let infuse for 3-5 days.
6. Strain twice and pour into sanitized non-reactive jars.
7. Enjoy!
