Hash Browns 3 Ways
Classic Hash Browns
Ingredients:
1 gold potato, washed, grated, soaked in cold water for 5 minutes, drain and rinse, dry with paper towels.
½ tsp. Salt
2 tsp. Grassfed butter
¼ tsp. Garlic powder
A few cracks of pepper
1 Tbsp. Avocado oil
Place the oil in a frying pan over medium heat. When oil is hot add the butter. Add the potato to the pan and spread it into an even layer. Season with salt, garlic powder and pepper. Cook for 4 to 5 minutes or until the potato turns a golden brown.
Section the potato with a spatula to make it easier to flip over and cook the second side for another 4 minutes. Serve with other breakfast items like eggs and bacon and enjoy!
Lower Carb Hash Browns
Ingredients:
12 oz. frozen cauliflower rice
1 gold potato, washed, grated, soaked in cold water for 5 minutes, drain and rinse, dry with paper towels.
¼ cup parmesan cheese, grated
1 large egg
¼ tsp. Garlic powder
¼ tsp. Salt
Pepper
¼ cup onion, finely diced
2 Tbsp. avocado oil
Directions:
Place the cauliflower in a frying pan over low heat. Cook until defrosted and warm. Place into a bowl lined with a clean thin towel. Pour the cauliflower into the towel and bring the sides of the towel together and twist the cauliflower/towel to squeeze out as much water as possible. Pour the cauliflower into a mixing bowl. Add the prepared potato and add all the ingredients to the bowl. Stir until well combined.
Preheat a large frying pan over medium heat. Add the avocado oil and get it hot. Place a scoop of mix in your hand and shape the mix into a patty about ½ inch thick. Place the patty onto the spatula and gently push the patty into the frying pan.
Cook patties 5 to 6 minutes on each side until golden brown and cooked through. Place patties on a paper towel covered plate. Enjoy!
Sweet Potato Hash Browns
Ingredients:
1 medium sweet potato, rinsed, peeled, grated, soaked in cold water for 5 minutes, drain and rinse, dry with paper towels.
½ tsp. Salt
¼ tsp. Garlic powder
¼ to ½ tsp. Chipotle chile powder
1 Tbsp. Avocado oil
Directions:
Place the oil in a frying pan over medium heat. Add the potato to the pan and spread it out into an even layer. Season with salt, garlic powder, and chipotle chile powder. Cook for 4 to 6 minutes or until the potato turns a golden brown.
Section the potato with a spatula to make it easier to flip over and cook the second side for another 4 -5 minutes.
