Your dacquoise seems amazing; I have made different ones even more complicated. However, I am intrigued when one or more ingredients quantities are omitted. Why? Here it is the corn flour you add at the coffee cream. Can you please clarify. Thank you.

Dacquoise is confused with success(pronounce soon say) and other versions containing milk which are the russe version. They're all similar. In France it's more common to make with tante pour tante which means half and half which refers to half almond flour and half powd sugar. They sell it in 100 lb bags to pastry shops. Baking it with ground hazelnut is geared more to the home baker. Bakers use ingredients available wholesale ... They don't make ingredients. I'm a French trained pastry chef. Retired now.

Thanks! If you like a chewy meringue add cornflour and white wine vinegar into the foamy egg whites. When you’re finished baking, turn off the oven, open the door slightly but leave the meringue inside so it can cool down gradually - that should work 🤓

Hi! Traditionally it's made with hazelnuts but yes you could substitute them for almonds (whole or flakes - not ground) 😊
