I’m about half this man’s age. Forget cooking all the dishes during busy service hours. I would probably get tired just doing all the prep work. And he has been doing this for 65 years? That’s real dedication. Much respect to this chef.
I respect his passion! You can tell he loves what he does, and those he cooks for. I wish the restaurants in Texas operated the way he does. It seems to be about using the cheapest stuff, and overcharging, where I live

That’s the American way,man.Same thing here in Alabama.Service here has gotten so bad, I rarely go out anymore.Prepare the majority of my food at home.Which I enjoy anyway.
The chef is a master. Watch as he cooks the perfect meal without even looking. God Bless

This man is amazing. There’s no time to do things gingerly. Food flying, utensils slamming, broth splashing but the final display is flawless. I can only hope to have 1/10th of your passion when I get older.
When Mr. Sakihito starts his kitchen is just pure fire, everything He does has content, from the preparation, all of his senses are focused in the final product, it seems like the consistency of his hard work pays off with success, I like in Japan when the owners call the quits, They actually are hired by the new owner to oversee all operations, and help the owner to retain the customers with the traditional flavors.

I’ve seen several videos of this diner, his son is often there helping. I think he is taking over in future.

For 75 he seems so supple and energetic. Hard work in his field must help him enter a place of meditation where he just flows and is completely in the moment.
