INGREDIENTS:
2 whole bell peppers
Half of a white onion
2 garlic cloves
2 large tomatoes
1/2 pound beef
1 tsp salt
1 tsp black pepper
DIRECTIONS:
1. Preheat the oven to 375 degrees F. Cut the bell peppers in half and remove the seeds. Then set aside to assemble later.
2. In a mixing bowl, add olive oil, salt, and the bell peppers to incorporate. Then on a sheet pan, place the the peppers in the oven and bake for 15 minutes.
3. While the peppers are baking, dice the onion and one of the tomatoes, and slice garlic thinly (as shown in video).
4. In a sauté pan over medium-high heat, drizzle with olive oil and add the onion and garlic. Sauté until golden brown.
5. Add the diced tomatoes in the pan and sear for about one minute. Incorporate salt and pepper into the mix.
6. Add the ground beef into the mixture. Then cover the pan to cook everything together for about 10 minutes, or until the beef is fully cooked.
7. Slice the other tomato as shown in video. Then in a baking pan, drizzle with olive oil and add the sliced tomatoes.
8. Place the baked bell peppers on top of the tomatoes. Then fill each half with the ground beef mixture, making sure to fill them generously.
9. Bake in the oven at 375 F for 20 minutes. Serve immediately with parsley as optional garnish and enjoy!
