Sweet Potato Tuna Salad Recipe
Ingredients:
1 sweet potato
1 bag of spinach
1 onion
2 cans of tuna
2 boiled eggs
1 bunch of cilantro
2-3 TBSP Olive oil for the pan
Salt to taste for eggs + sweet potato
Tuna Mix:
1/3 white or yellow onion
1/3 cup vegenaise (or mayo of choice)
2 TBSP yellow mustard
2 tsp ‘Cholula’ hot sauce
•black pepper to taste
