While it toasts, mash ripe avocado with a squeeze of lime juice to make a quick version of guacamole. For perfectly fried eggs, I simply spray my pan, crack an egg into it, add a splash of water, and cover it with a lid to let it cook in steam. That's my secret to achieving the perfect fried egg every time. Spread the guacamole on the toast, top it with the slice of cheese and fried egg and add plenty of fresh greens like spinach, rocket or arugula.
