Lemon Blueberry Bread Recipe!
Ingredients:
Whole wheat flour 1 & 3/4 cup
Baking powder 1
Baking soda 1/2 tsp
Salt 1/4 tsp
Eggs 2
Olive oil 1/3 cup
Honey 1/2 cup
Lemon juice 1 tbs
Lemon zest 1 tbs
Greek yogurt 1 cup (room temperature)
Vanilla sugar 1 tbs/Vanilla extract 1 tsp
Blueberries 1 cup
Process:
-Preheat oven for 10-15 minutes.
-In a bowl, mix together the first four dry ingredients.
-In another bowl, lightly beat eggs.
-Add oil, honey, yogurt, lemon juice, lemon zest, vanilla sugar & mix it.
-Fold the dry ingredients into wet ingredients.
-Add blueberries in mixture & slightly fold them into the batter.
-Transfer the batter into pan & spread out evenly (Lined the pan with parchment paper).
-Add some extra blueberries at the top.
-Bake for 40 minutes or until toothpick comes out clean (after 10 mins of baking, loosely throw a piece of aluminium foil over the top to protect it from getting browner).
