This nutritious and delicious makhana and peanut laddu recipe combines the goodness of fox nuts and peanuts with the natural sweetness of jaggery. Perfect as a snack or a quick energy booster, these laddu are easy to make and packed with protein and fiber.
Ingredients:
Beaten rice-1 cup
1 cup makhana (fox nuts)
1/2 cup peanuts (roasted and skinned)
1 cup jaggery (grated
1/4 cup desiccated coconut -you can add
1/2 teaspoon cardamom powder
#### Method:
1. *Roast Makhana:*
Roast beaten rice for crunchy on low flame
makhanas and roast them on a low flame until they become crispy, about 8-10 minutes.
Let them cool, then grind them coarsely.
2. *Roast Peanuts:*
In the same pan, add a bit more ghee if needed and roast the peanuts until they turn golden brown.
Allow them to cool and remove the skins.
Grind them coarsely.
3. *Prepare Jaggery Syrup:*
In a separate pan, melt the jaggery with a tablespoon of water over low heat until it dissolves completely.
Once it starts bubbling, cook for another 2-3 minutes until it forms a thick syrup.
