Mashed Cauliflower
1 medium sized head of cauliflower
4 tablespoons avocado oil
6 cloves garlic
½ teaspoon salt
1 tablespoon chicken bouillon
6 sprigs cilantro
Wash the cauliflower head well and chop into small pieces. Place in the blender add a little water and pulse a few times to chop it finely. Place a pot on the stove and add avocado oil. Add crushed garlic and cook for about 2 minutes, then add salt. Add the cauliflower, and give it a good mix. Add chicken bouillon, and allow the cauliflower and cilantro and allow to cook for about 8 minutes. Turn the heat off and set aside.
Grilled Chicken
2 lbs chicken thighs
1 tablespoon paprika
1 tablespoon black pepper
½ cup olive oil
1/2 cup low sodium tamari sauce
Start by washing the chicken thighs, then pat them dry. In a large wide bowl. Mix the following ingredients:- Paprika and black pepper, Next add olive oil and tamari sauce to this spice mixture and mix it well. Add the chicken things into the marinade, cover with cling film and marinate in the refrigerator overnight for better flavor. Remove from the refrigerator 90 minutes before cooking. Preheat the oven to 400 degrees fahrenheit. Place aluminum foil at the bottom of a baking tray, and place the chicken in the baking pan, and place in the oven for about 45 minutes. When done, allow to rest, cut into bite size pieces and set aside.
Fajita Veggies
4 tablespoon avocado oil
1 medium white onion
8 cloves of garlic
½ teaspoon salt
1 green bell pepper
1 orange bell pepper
1 yellow bell pepper
1 red bell pepper
Place a pot on the stove, add avocado oil, saute the onions, add salt, followed by the pell pepper mixture. Give it a good mix. Cook for about 3 minutes and set aside.
Hot Turmeric Sauce
2 tablespoons avocado oil
½ white onion
8 garlic cloves
4 habanero peppers
8 oz tomato sauce
1 tablespoon tomato paste
½ teaspoon salt
1 tablespoon turmeric
1 cup chicken stock
6 sprigs of cilantro
Place a pot on the stove, add avocado oil, saute onions for a few minutes and add grated garlic. Add habanero peppers then tomato paste and give it a good mix. Once the garlic is cooked add habanero peppers, tomato sauce, tomato paste and give it a good mix. Add salt and turmeric and give it a stir. Add chicken stock, give it a good mix. Add chopped cilantro and cook for an additional 2 minutes, turn off the heat, blend and set aside.
Small Red Kidney Beans
Measure one cup of beans, wash it and boil in water until tender and set aside.
Putting The Chicken Meal Prep Bowl Together
Into the meal prep bowls, serve mashed cauliflower. Serve small red kidney beans. Serve fajita veggies. Serve the grilled chicken. Portion the hot turmeric sauce into small glass containers. Cover and place in the refrigerator.
