INGREDIENTS:
Porridge:
1 cups peeled wheat berries
1 lb (0.5kg) lean beef (lamb or chicken breast works as well)
1 large onion peeled and halved
1 tsp. salt
Toppings:
cinnamon
sugar
melted ghee (or butter)
shredded meat
INSTRUCTIONS:
Make sure the wheat berries that you are going to use are peeled: meaning that the bran has already been removed.
Soak the wheat berries in cold water overnight. Strain them and place them into a medium-sized pot to cook. Add enough fresh water to cover the wheat but at least 2 inches. Add the salt and cover the pot. Turn the burner on high. Once the water starts to boil reduce the heat to medium and continue to boil for about 2 hours. Check occasionally to make sure there is still enough water and that the wheat doesn’t burn. Add more boiling water as needed.
In the meantime cut the meat into large chunks (about 3-4 inches) and place them in a separate pot. Cover the meat with water. Add the onion and cover. Bring to a boil on high and then reduce the heat to medium. Simmer for about 2 hours until the meat is soft. Remove the meat from the water and shred the meat. Set aside. Strain the onion from the broth that the meat was cooking in. Set the broth aside.
Once the wheat is very well cooked (about 2 hours or more if needed). Use a hand blender to puree the wheat berries. Slowly add the meat broth and continue blending. Blend until very smooth. Add ¾ of the shredded meat into the wheat. Stir until well combined with a spoon (do not blend). The haleem is finished.
Decorate the top of the haleem with the rest of the shredded meat, cinnamon, sugar, and ghee. Serve hot with flatbread.
