What is the purpose of this design? Varying plant and insect life? Water retention? Genuinely curious what this aims to accomplish. It does look beautiful .

creating berms and planting on contour lines (same lines as on a topo map), slows the water down and increases the soil water holding capacity

Slow spread and sink stormwater events - on contour mounds with deep rooting perennials on them. Diversified yields - 3 dimensions of food not just two, including fruits and nuts not just grass. Tho we like grass! Shade for livestock. Livestock food. Windbreak, livestock protection. Nursery sales - tree sales, have sold 60,000 dollars of trees from three rows alone. Beauty. Etc etc.

Insect and other wildlife yes a major reason as well. Some of these trees are grafted with winter-holding turkey apples. 50 varieties of cider and eating apples here too. 5 species of oak. Many of chestnut, mulberry, pear hazelnut etc. soil formation is the backdrop goal.
