Ridge gourd or Heerekai is one of the vegetables you would usually find in the ‘Allowed/Recommended’ list of veggies from your Ayurvedic doctor. It is called Koshataki in Ayurveda and is a creeper vegetable. It has 2 varieties- the bitter (used for medicine) and the non-bitter one (used as a vegetable). The vegetable has slight tikta ras (which reduces inflammation) and is laghu (light) for digestion. It balances all the 3 doshas and is excellent to use during illness and recovery.
It is low in calories and contains dietary fiber, vitamins A and C, as well as various minerals such as calcium, iron, magnesium, and potassium.
Green gram (Mudga) is a highly regarded pulse in Ayurveda. Both the whole green gram and the split one is used extensively as medicine and food. It is one of the few foods which can be consumed everyday. It is light and nourishing and the nutrition profile includes folate, thiamine, riboflavin, niacin, pyridoxine, zinc, magnesium and calcium which makes it a must have food on our plates.
