Inside a gleaming shop in the heart of Pike Place Market, a dozen machines are constantly churning.
"You get the gelato as fresh as you can get. There's something very special about tasting the product straight out of the machine," said Pete Apostolopoulos, co-founder of Hellenika Cultured Creamery.
The thing is, at Hellenika, they don't make ice cream or frozen yogurt; it's what Pete and his brother, co-founder Alex Apostolopoulos, call cultured gelato.
Guests can choose from 12 different flavors at any given time. It's available in three sizes - from the smallest, dubbed the "walk around size," to the large, which is almost a pint. As for the menu, it changes constantly as Pete develops new offerings, often utilizing products from other vendors at the market.
