In today's episode we are cooking fish, HERB INFUSED GRILLED AHI TUNA STEAKS with sashimi grade tuna. This recipe cooks in a few minutes. Just preheat grill to high and soak tuna in our easy herb and spice marinade for fish, giving fish an intense flavor. Once grill is very hot, sear tuna for a minute or two, so tuna is seared on the outside and rare on the inside.

HERB INFUSED GRILLED AHI TUNA STEAKS
1 - 1 1/2 Tbsp olive oil
zest of half a lemon
juice from half a lemon
1/4 tsp red pepper flakes
1/4 tsp dried oregano (or 1/2 tsp fresh, finely chopped)
1/2 tsp dried basil (or 1 tsp fresh, finely chopped)
1/4 tsp salt
freshly cracked black pepper, to taste
1 large clove garlic, minced
1 ahi tuna steaks, sashimi grade, rinsed & dried with paper towels
1. Turn grill on high heat, around 400°F. In a shallow bowl, mix first 9 ingredients. Allow for ingredients to stand for 10 minutes.
2. Poke holes into both sides of tuna with a fork. Spoon marinade over tuna and press marinade into tuna, both sides. Allow tuna steaks to sit for 10 minutes. Grill on high heat, 1 1/2 to 2 minutes per side. Serve.
