done this recipe probably 20 times and on multiple cookers. It is without a doubt the top way to cook bbq chicken aside from maybe rotisserie. The flavors are incredible. I have done all cuts of chicken, whole bird is still my go to but legs, thighs, wings, anything works with this. The fresh herb bed adds a dimension that nothing else will.

I have made this chicken 6 times since getting my smoker in April. It is a favorite of everyone’s!!! I also was inspired to make an Alabama White Sauce that I have tweaked from this recipe and made “my own.” The white sauce has become so popular I am required to keep a jar in the fridge for my wife at all times and friends have even used it on steaks and tritip. Thank you for being an inspiration to so many of my cooks.🙌

Just made this. Best chicken I’ve ever eaten. Followed all the directions. Pat dried. Avocado oiled. Byron’s Butt rub. Nest of Tarragon, sage, and thyme. Took me a little over 2 hours in cold weather to hit 163 internal. Pulled it off immediately and it fell right off the bone while cutting it up. Nice crispy skin. Perfect. I don’t want to experiment with anything else again. 😂

Just want to say thanks guys for that absolutely delicious chicken recipe. I have been cooking chicken for years and this one is on top of the list. I guess the herbs did something special beacause every bit just melted in the mouth. No need for knife, just fork and that Alabama sauce.... Man! Awesome!

I've done this recipe on my electric smoker several times and I loved it. I got a Traeger pellet grill for my birthday and this afternoon I'm going to try it on there, so I was reviewing the instructions. I do note that while you put the smoker temp at 400 to start, he does say at 7:40 that you want to hold it in a 325 degree range, although that isn't in your written directions. Since my Traeger is programmable, I'm going to set it to 420 to put it in and then set it to 325 for the run. We'll see how it turns out. Thanks again for this video; I can highly recommend the recipe as my ideal way to smoke a chicken!

MALCOLM - my personal preference is to have the skin more done and maybe even a little bit crispy - this gentleman ends with the skin a little under done for my taste - but it's all personal preference - thanks again for your great videos

Well, I watched your video and it really helped. However, I use the Brickman for the first time. We started it at 2:00 PM EST and it is now 7:30 pm EST and we are really hungry. We had a problem getting to the temp. But, love your videos. Thank you so much. I love to BBQ. You guys are awesome. My herb garden still had fresh herbs in January 2021 in the snow. :))))

Love the channel. I tried this recipe today using my own AP seasoning (salt, lemon pepper and garlic). My only issue was I added a bit too much seasoning on the skin - so it was a bit salty. However, when chased with some potatoes augratin it balanced out as I did not add salt to the potatoes. Wish I could share a photo. Made on Weber kettle 22inch. Ive learned a lot from your channel. Keep it up.

That white bbq sauce recipe was excellent. Gotta admit, I was skeptical when I saw the ingredients. But the zesty flavor goes very well with smoked chicken.

Funny. I had seen this video posted, but had not watched it yet. Labor Day Weekend I bought a rub called Lambert’s Barbecue Sweet Rub O’Mine for my pork shoulder, which turned out very good. Had a nice smell to it too. I did realize this was the guy who made this run until Malcom said Sweet Swine O’Mine. This rub won world champion at Memphis In May in 2009 & 2013 and world champions pork shoulder in 2005, 2008, 2009 and 2013. Good stuff!

Did this last night on a Pit Barrel. Unbelievably delicious. Never heard of Alabama White Sauce up here in SD but this was by far my best smoked meal I've ever made. Thanks for the inspiration and instruction.

i always do whole chickens and often times Turkey, spatch-cocked. I also mix in horse radish to Alabama sauce (strength dependent on subject protein)

With the Red Box we found Kingsford slow burn charcoal is the trick. Royal Oak is fussy and not a consistent burn in the shallow tray and will quit on ya. A half chimney of coals dumped in the middle of the tray over the charcoal seems to work the best. You can over fill the charcoal tray and it won't get up to temp. Just the right amount is everything with the Red Box. When ya figure that out, a fantastic smoker.

Followed this to a T a few nights ago and the 6 lb chicken I smoked was incredible. I have an electric smoker that limits me to a temp of 275 so it took me about 2.5 hrs give or a take a few mins to hit 160 internal but it was well worth the wait. Skin was crisp, chicken was juicy and the family couldnt have been happier with the taste. Cheated little by using Mission BBQ's alabama white but I will be sure to use your recipe the next time. Thanks again. Loving all the content.

Nice video. I’ve gone back and forth on whether I brush my bird with oil. I’ve found that I don’t really need it and the skin comes out crispier. Also, I like to slice the breast bone right at the top and this helps to easily flatten out the bird. Then, if I’m ambitious, I remove that bone so that when I carve the breast it doesn’t get in my way, and I can slice the breast across it after the legs, thighs and wings are removed.

I do Tri tip and Baby backs in my Red Box. Love it. Feeding the Smoker wood to the charcoal is the trick. Took some practice to get it spot on.

This white sauce is really good. Almost tastes like the special sauce from my favorite burrito place so a HUGE THANKS because now i can work off it and try and perfect those flavors. As for the chicken, its still cooking so i hope it come out as good as it looks in the video

In a full spatchcock, you would also remove the keel bone. After cutting out the backbone, flip it, small slice just in front of the keel bone. Work your fingers along the keel and take it out. Lays flatter and is easier to carve when done.

@@Payton77 for birds, normally I go indirect 275-300 range . 350 is great too especially towards the end if you’re wanting that crispier skin. I spray with some cooking oil a few times as well
